If you are anything like me you have been drinking lots of coffee this week trying to catch up with the new daylight savings time. With spring just around the corner I wanted to share this easy recipe that will certainly brighten up your day!
This lavender honey recipe is quick and easy, it yields about 8-10 ounces of simple syrup meaning you can store it in the fridge and use it again and again. Not only is it wonderful to add to iced coffee, it's perfect for hot coffee, cocktails, and even lemonade! The sky is the limit!
Lavender Honey Simple Syrup
2 teaspoons of fresh lavender
1/2 cup granulated sugar
1/2 cup of water
1/2 cup honey
1. Add all ingredients to a small sauce pan and heat on low until sugar has melted and all ingredients are combined.
2. Simmer on low for about 5 minutes, stirring constantly so that your mixture does not burn.
3. Remove from heat. Mixture will begin to thicken as it cools, allow to cool completely.
If you prefer, you can strain out the lavender buds after your syrup cools. Another alternative would be to use food grade lavender essential oil instead of fresh lavender buds. Please note if you use a food grade essential oil it will be much more potent than the lavender buds, you will need to play around with the amount of oil that you use but my recommendation would be to start with just a few drops.
To make your latte, simply follow our recipe for our cold brew iced coffee, then add your honey lavender simple syrup to taste (I suggest about 1 1/2 - 2 tbsp)!
